French Press vs. Pour Over (Chemex style) Coffee

My french press chipped so i was going to toss it and get a new one, or go with a Chemex, but i've never used a Chemex. What are your recommendations: French Press or Chemex?

I have an aeropress that i use over the weekends for single cups, but if my wife wants some, or i have visitors, i'll usually break out the French Press.

I have both and I choose my Chemex 90% of the time. To me it just makes a smoother cup of coffee.

I agree with Salmon. The Chemex is more time consuming but it makes an excellent cup of coffee.

My recommendation is skip the chemex and get a v60 or wave. Also use fresh beans, Baton Rouge and Nola both have French Truck roasters, they have great beans.

What is your preferred variety from French Truck? I've tried a few and can tell they are quality, but haven't really resonated with the flavors.

I tend to go to Garden District Coffee. Every thing they put out is quality.

Yep, but change the percentage to 98%. I use the French Press maybe once or twice a year. French press coffee can be overly bitter if your proportions are off just a little bit.

I'll look it up. I typically use fresh beans. Whether it be Cafeciteaux, Titan, or Congregation out of Algiers.

I do weigh my beans and water. It takes a few seconds.

"Best" is a matter of taste. I find Chemex coffee thin-bodied....I like a little bit of sludge, esp if I'm making a cafe au lait. Heck, I like moka-pot coffee; it can be almost chewy. What some see as a deficiency, I happen to like.

Other drawback of Chemex: it doesn't stay warm for very long. So wrap the carafe in a tea towel or cozy if you're slow-drinking a few cups on a weekend AM.

Get a stainless steel french press, no worrying about breaking anymore. Plus the vacuum insulated ones keep the coffee hot.

I haven't lived in Louisiana for a year or so, but I really liked a couple of the Brazilians they do.

If you don't mind shipping costs, there's a place out of Denton Texas called Combs Coffee that is amazing. Best coffee I have ever had, hands down. From my understanding, making coffee is actually a side gig of his, and he makes most of his money actually flying around the world rating beans.

I'm the same.

Guy in that other big coffee thread (the one who clearly knows his shite about coffee - and I liked his insights) dumped on moka-pot, calling it "muddy." I was thinking, but that's what I like about it.

Very disappointed in their Baton Rouge beans compared to Cafeciteaux.

Also, count in me in the group that finds Chemex to be too thin.

And I like bitter coffee. My wife goes crazy cuz I leave the french press brewing for 30 minutes before I plunge.
