Went last night. Had the crawfish dip app with pork skins, natchodiches meat pie, and s’mores pie (shared with table). All were very good. Kids had burger with pimento and crawfish pie and they were happy. Had a juicifer from gnarley barley to wash it down (me - not kids) Nice crowd at 8:00 ...

Made second visit last night. Was not thrilled with the 1st visit but gave it another shot as it is close to my house. Quality of fish was on par with grocery store rolls. 2 in our party had not received their correct full orders by the time the other two were done. Value nowhere = price....

I like to add about 1/3 of the water and swirl it around the grounds to ensure all are moist. Then I add some water to my cup to warm it. Then add the remainder of the water to the press. Stir fast for 15 seconds or so to develop a layer of crema. Let stand for about 3 minutes but I don't time...

I leave the cap on and score the fat in a crosshatch pattern about 1/4 inch deep. I think it helps it render more evenly and allows the rub to penetrate the meat under the fat. I smoke it fat side up at 230-250. ...
