So how does this work? Almost all dishes not devoid of flavor have onion, if not onion and bell pepper. Do you refuse to eat the majority of restaurant offerings? If some baw has a gumbo at a tailgate do you pass on principle because it may contain onion and bell pepper?

If it’s a texture thing then you have nothing to worry about after a day in a crock pot.

True. And you can grate or food processor the onions where these is no texture to deal with. I would use half the amount in that case

Other things I add - pork shank, sausage, parsley, dash of fish sauce

I'm typically not a shortcut guy but these seasoning packets are great. They're kinda salty so be cautious of that.

I cook them down, then mash them a couple times - not until its mushed, but until they just start to break down.

That's damn near how I start most anything I cook in a pot..

Fresh garlic is worth it. I usually throw it in ab half way through my onions and bell pep cooking down.

I will get crucified on here, but onions, green peas, and bell peppers are the only three things I won't eat.

Then add a finely chopped jalapeno.

Also a couple of teaspoons of Better than Boulllion since you're doing beans go with ham and roasted vegetable flavor. It gives good depth of flavor but its very salty so you may want to wait before adding salt.

You can either cut the onion in half and the bell peppers in quarters or process or grate the onion and leave the bell peppers big if you don't like the texture
