First attempt at Navy beans

I know it's not rocket science. I am going to soak overnight, cook in a crock pot, use chicken broth to cook, add thick sliced smoked bacon, and a ham hock. Don't suggest onions or bell peppers.
Suggestions, tips, or do's and dont's?

You can try a packet of this if you like. It makes a good pot of beans.

If you don’t like onion/bell peppers how about garlic?
Plenty of seasonings you can use, I’d use salt, pepper, garlic powder, onion powder, chili powder, and smoked paprika. Some cayenne if you want heat

Smoked Paprika is something I thought about and don't mind heat, thought about some jalapenos.

If your problem with the onions is more a texture thing (I can't stand undercooked or raw onions myself), you can try using onion powder to still get some of the flavor. I'd add onion powder and garlic powder to the bacon, ham, beans, and stock.

Yeah it's a texture thing, powder I can handle.
Garlic I love, should I add minced cloves or is the powder enough?

If you have freah garlic, I'd mince it. Otherwise I'd just use powder. I'm not a huge fan of preminced garlic in a jar.

Soak in chicken broth instead of water. Water is flavorless.

Celery has taste!
I always put onion, green bell pepper & celery in white beans. Cut them small and put them in for the last 30 minutes of cooking, you may notice the celery crunch, but the onion and bell pepper will not be noticeable, other than the green color of the bell pepper bits.

Table spoon of liquid crab boil and a pack of ham hocks. Salt to taste. Tj ribs recipe and it is amazing

Brown some sweet or mild Italian sausage links. Don’t cook all the way, just brown on all sides. Remove. In same pot cook bacon to your desired doneness and then scoop out but leave the grease. Use a shallot instead of onion. Dice it up small sauté it in the bacon grease slowly over medium low heat .it will cook down til it’s very soft. Add some diced garlic and continue to sautee for one more minute until you can smell the garlic but make sure you don’t burn. Deglaze botttom of pan with a quarter cup of white wine. Cook until wine has reduced some and the alcohol has cooked out. Add beans and chicken broth. Season with salt, pepper, fresh thyme, and a bay leaf. Add bacon and Italian sausage back and simmer on low until beans are done. While it’s cooking mix up some Italian bread crumbs with some graded or shredded Parmesan cheese. Remove the thyme stems and bay leaf and sprinkle a layer of the bread crumbs over top of beans. Pop in oven for a few minutes to toast the bread crumbs. Pull and serve over rice with garnished with some fresh parsley.

Add a minced, fresh jalapeño pepper or two. And a couple of bay leaves.
