I would recommend spreading mahaw jelly on your toasted bread in lieu of the cheese, it works perfect with the saltiness of the spam. or really any jam or jelly would work. I just prefer Mahaw because my Grandma always had homemade mahaw jelly handy.
I think I might try the spam with my kids this weekend.

Yep, I'll pick up some Treat or Spam once a year or so and fry it up for sandwiches. Nostalgia thing for me too.
I even do potted meat every once in a while as well. I love a potted meat and mayo sandwich.

Yesterday’s lunch was Spam and cheddar quesadillas.
fried bologna (ham on better days) and my neighbors homemade tortillas were a daily summer lunch for me

Imagine living life like this? What's the point of running, working out, etc, etc if you can't drink a beer and have a bologna sandwich?

Dang... Pump the brakes, Karen. This is the food and drink board, not the rant. People talk about food and don't necessarily need any arse chewing.

Used to have fried SPAM a lot as a kid. Always on white bread. Mom would slice it really thin and fry it up crispy.
With yellow mustard

Just fried up some spam for the first time in over 20 years thanks to this thread. Lord, it was salty… and I like salt.

The low sodium is the way to go. FYI

I have eaten possum, coon, snake, dog, cat, and potted meat, spam, blood, oil and vienna sausages.
All of those are good eats somewhere. None of them killed me. Heck, I even eat head cheese, sardines, and souse.

You’d think that, wouldn’t you? It should be cheap. A few years ago I had the urge to try it again just for the sake of nostalgia but it was more expensive by weight than fresh pork shoulder. Pass.

Get the low sodium. It tastes the same but a lot less salty.
^^^This^^^
I do it one of two ways, cut it into 4 slices, pan crisp and make a sandwich with Dukes, slice of Spam, and an over easy egg, or dice the slices up into cubes, pan crisp them on all sides, sautée some diced onion and sliced jalapeño, and plate it and cover with a couple of over easy eggs.
