Favorite Things to Cook when Dieting

Looking for some fun new recipes to try to stop eating the same 5-7 meals in rotation. Looking for meals <500 Calories.

Have stove, oven, grill, and smoker available.

I buy chicken breasts, pound them to uniform size, marinate in Stubbs Pork Marinade overnight, then grill.

I pair that with cilantro lime rice and eat for lunch 3-4 days a week.

Also buy the thin sliced breasts and marinade for an hour or 2 in olive oil, chili powder, garlic powder, salt, pepper and lime juice. Sweat some onions and bellpeppers in a skillet, then cook the chicken to make fajitas.

Salmon, asparagus, and rice is always a go to for us. Can sub cauliflower rice if you’re trying to limit the carbs.

chicken breast. rub with salt, pepper, garlic salt, chili powder, cumin. Broil in the oven. They come out super juicy and almost no fat

if you want to stay under 500 calories and be full, your best bet is about 8 oz of lean meat and as many vegetables as you can stomach. leaves you 100 calories for sauce, butter, or cheese to enhance flavor.

I really like Shakshuka or Eggs In Purgatory or Juevos Ranchero when I'm dieting. Sweat lots onions, peppers, celery, carrots, or whatever in some oil, add a couple cans of crushed tomatoes and reduce it down to a thick sauce. For Shakshuka, add Middle Eastern seasonings like turmeric, cardamom, cumin, lemongrass, etc. For Eggs in Purgatory, use basil, marjoram, thyme, and oregano. For Juevos Ranchero, I use pre-mixed taco seasoning. Once the tomato sauce is nice and thick, make some hollows in the sauce and crack eggs in them. Put a lid on it and let the eggs poach until whites are set and yolks are runny. Serve with pita, french bread, rice, or nothing if you don't want the carbs.

Palmini noodles and Shiritaki noodles. I use Palmini for spaghetti and Shiritaki for Asian noodle bowls. Both delicious and low calorie/low carb.

Eat whatever you want, but limit the portions. We make gumbos, etouffees, creoles, etc. all the time. But we don't add rice and we bought tiny bowls. We also use a lot of heat. Habaneros are in a lot of what we cook.

I don’t think I have ever seen a 4oz ribeye. How would you even cook that? It would have to be on cast iron. A 4 oz ribeye would be so thin that it would fall through the grates of a grill.

This is one of the reasons we eat a lot of sirloin in our house. Yes, ribeyes and strips are better but sirloins can be made very tasty and still be cooked in a healthy way. I find that leftover sirloin is easier to use in another meal for some reason.

Either way, I came here to say that sirloin rubbed with pig stand basting oil and then hit hard with hardcore carnivore black makes a fine grilled steak for significantly fewer calories than ribeyes and strips. The trade off is that it is a little tougher and you don’t get the “fatty” flavor. You have to make your flavor with seasoning.

Jones did a sirloin with Hardcore Carnivore 2 nights ago sous vide then blow torched, and TBH it looked fantastic.

OP - we do lots of low cal eating during the week. Current fave is this Buffalo chicken cilantro rice bowl
