Mexican casserole is about the only casserole dish we fix regularly.

Me too. Going to do mine like this:
King Ranch Chicken
Yields: 12 servings
Ingredients:
Cooking spray
1 tbsp. extra-virgin olive oil
1 onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 (10.5-oz.) can cream of chicken soup
1 (10.5-oz.) can cream of mushroom soup
1 (10-oz.) can Ro-Tel
3 c. cooked shredded chicken
1 tsp. chili powder
1/2 tsp. cumin
Kosher salt
Freshly ground black pepper
18 corn tortillas
1 1/2 c. shredded cheddar
1 1/2 c. shredded Monterey jack
Freshly chopped cilantro, for garnish
Directions
Preheat oven to 350°. Grease a large baking dish with cooking spray. In a large skillet over medium heat, heat oil. Add onion and bell pepper and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute.
Add soups and Ro-Tel and stir to combine. Season with chili powder, cumin, salt, and pepper. Remove from heat.
Layer 6 tortillas in prepared baking dish, overlapping as necessary. Spread a third of sauce over tortillas, then top with half the chicken and a third of cheese. Repeat layers, ending with 6 tortillas, sauce, and cheese.
Bake until chicken and tortillas are warmed through and cheese is melty, 30 minutes.
Garnish with cilantro before serving.

I make a chicken spaghetti casserole also that's baked.
I'm in the process of making a chicken and cornbread casserole at my Mom's request. I love it and it's the only time I use Jiffy because it just works well in flavor for this. The chicken is in a cream sauce. The cornbread is spread over the top and it's baked. I love it particularly during cold weather months, though I will eat it all year round.

My wife makes a mean hashbrown casserole, as well as another potato casserole (not sure of the name) that she makes when we cook a whole beef tenderloin. She also makes cornbread dressing really well.
However, my Mom is the casserole queen. I think she has at least 5-6 recipes for every type of casserole you would ever want to make.

I have done chicken rotel spaghetti baked and on the stove top. Good either way.

My mom used to make this corn or squash casserole that had green chili’s, cheese, butter, I don’t know what else.... so good... the topped with crushed tortilla chips. Miss her made from scratch chicken dumplings, red beans (might be able to beat her on those), gumbo, and so many other dishes. She never wrote down her Effin recipes and now I can’t remake them. My favorite was her cornbread dressing but we’ve looked over the past year since she passed and can’t find any recipes. She loved to cook a feast all day and serve for holidays, LSU games or any random family get together.

I'd say it's a tossup between lasagna and twice baked potato casserole. Both very filling and absolutely delicious.

Cauliflower Taco Bowls
2 lbs ground beef/turkey
2 packages frozen cauliflower rice (you can also use the cauliflower/broccoli mixture and it’s pretty much the same)
2 tubs spreadable cream cheese (I like chive/onion and jalapeño)
1 small onion
Garlic
Salt/pepper
Fresh Spinach (optional)
Shredded cheese
1) Sauté onion in a little oil for about 5-6 minutes
2) add meat and garlic and brown.
3) loosely tear fresh spinach and add, stir until wilted
4) while meat is browning, cook cauliflower in microwave for 5 minutes per bag.
5) Add taco seasoning and cream cheese and stir until incorporated
6) Once meat is brown and spinach is wilted, add cauliflower and stir
7) (optional) Pour mixture into pan and top with shredded cheese. Bake at 350 until cheese is bubbly.
I usually serve straight from the pot and top with cheese (because less dishes, right?)
I’ve done this with rotisserie chicken and chopped broccoli instead of ground meat and spinach. I’ve also omitted the taco seasoning and it’s still delicious With just cream cheese. And one time I did it with sautéed shrimp. This dish has so many possibilities! And using cream cheese, it’s much lower carb.
