I don't know if it counts as a casserole since its a baked pasta, but I TEAR UP Velveeta chicken spaghetti.

Chicken breasts slightly pounded and placed in casserole dish, cover breads with pesto, a bag of fresh baby spinach, a jar of marinated artichoke hearts, sun dried tomatoes, shredded mozzarella and either shredded Parmesan or Romano. Bake at 350 for about 30 minutes and serve over rice. The oil from the pesto keeps the chicken juicy. Easy weeknight meal.

We have never baked it

Is homemade Mac & cheese a casserole?
If not then sweet potato casserole (candied pecans)

Calling it a casserole is a stretch, but I bake in a casserole Pyrex so whatever. Cube a few pounds of chicken, dredge in bread crumbs and pan fry. Toss in a few cans of artichoke hearts. Mix up balsamic vinegar and some oil oil and pour over the top. Bake to brown and can throw some grated paremesan on if you’d like.

It’s simple, but I’ve made it regularly for 10+ years. The tang of the vinaigrette vs the meatiness of the chicken and artichokes go great together
