Crab cakes first attempt - disaster

So, the SO bought all the stuff for this and did all the work leading up to the frying. She wasn't confident enough to do it, so she asked me. Never done this before, so I followed the instructions to a T. Possibly in my top 3 kitchen fails. These things crumbled as if the insides were the wrong sides of a magnet. All we have now are the Peanuts Christmas trees of crane cakes. I am not a chef.

They do much better if you let them sit overnight in the fridge before cooking

Crab cakes can definitely be fragile. What ingredients did you use as the binder ?

She did it, but * think eggs and panko.

I was pissed when I posted. As it turned out, they were great even though they looked like crap.

How did they taste? If you could put it on a cracker and it tasted good then all was not lost. Live and learn.

Use a fish spatula to flip them. If I had to guess the oil was too hot and you didn’t leave then down long enough. Or not enough binder.

You aren’t the first to mess these up so don’t beat yourself up over it.

Buy a can of Old Bay and follow their recipe on the can. I cook them in the oven (broiler) and they never fall apart.

I second this. Ridiculously easy, and besides the outrageously priced crab meat, it calls for only a few ingredients, most of which should be in your kitchen already. It tastes so much better than fried crab cakes,

Did she put them in the fridge for a bit so they could set before frying?

Leave the crab cakes to the professionals; I usually get my brother to bring me a tub of G & M Restaurant crab cakes whenever he comes visit.

Hmmm....

The cakes need to be pretty cold before cooking. Maybe an hour wasn't long enough. I actually put the mixture in the fridge before forming the cakes. I put the cakes back in the fridge to get good and cold before cooking. Haven't had an issue.

I've read that over mixing can also cause them to fall apart, but I have no experience with that.

My MiL sort of used this recipe, but her's were only crab, enough crushed saltines to bind it together, and Old Bay. That's it. Best I've had. My wife makes them the same way. Some on the Eastern Shore would add diced green pepper and onion and maybe mix in an egg, but her's were basically crab and Old Bay.

The only thing I see that I find strange is that the recipe says to mix everything all at one time. I've always beaten the eggs a bit and then mixed all of the ingredients with that except the crabmeat which I fold in gently. I don't know if that could have caused the issue, though. I think it would break up the crabmeat more if you haven't mixed the other ingredients first, though.

ETA: As I thought about what I wrote, I realized I don't mix the breading in with the wet ingredients and seasonings. I toss the crabmeat a bit in the wet and then add the bread crumbs. I grind fresh bread crumbs in the food processor rather than panko. I find panko to be too dry for the filler part. I do sometimes put the formed cakes in some panko on both sides before frying, but not always.

As I said before, I chill the mixture before forming the cakes and then chill the cakes for at least an hour if not more before cooking them.

The recipe itself looks fine. Sorry I'm not very helpful!
