Hell yeah. I make gumbo with rotisserie chicken quite a bit. Saves lots of time.

So a hen really isn't even a hen. If you buy a cornish hen, fryer and hen it's all the same bird just slightly different ages. It's all a cornish x rock cross. What is called a cornish hen is just very young probably a couple weeks old. What is bought as a fryer is 6 weeks to maybe 8 weeks old. A hen is same bird just a few weeks older all how it's marketed. A hen really should be over a year old but that one in store iant.

I do one traditional rotisserie chicken and about 2lbs of cut boneless chicken thighs in my gumbos. The thighs add a bit of flavor along with the seasoning from the rotisserie chicken.

Why hen? I’ve eaten hen in gumbo and it’s kind of tough.

Use thighs with skin for texture and flavor. Remove skin when cooked.

I only use hens but I like cooking my gumbo for a long time. A fryer will not hold up to long cooking times. It breaks down and is stringy. A hen won’t do that.

Today's 'hens' are not the same as they were in the past!! Basically they are not worth a shat!

My dear old mother said hens have a much better flavor and I agree. Just cook it longer. They have hens at Rouses for $0.99 lb but they are frozen.

Render the fat/skin that you trim first and use that oil to make the roux then you don't have to dig out and miss chicken parts. Bonus you get some fresh chicken crackling. I am trying that this weekend.

Never thought I'd see the day when chicken wings cost more per lb. that some cuts of beef.

I prefer to use baking hens for gumbo and soups, especially chicken noodle soup.

They are larger birds with firmer meat and better flavor than fryers. They hold up well if cooked a long time and I will remove them from the pot to pick the meat into bite size pieces and discard the fat and bones.

I don't like gumbo with whole chicken pieces in it.

I bought the last 3 they had in their case a couple days ago and put them in my freezer for later use.

They had Cure 81 Spiral Sliced Hams on sale for $.88 a lb. and I picked up an 11 lb. one today.

When I was a kid chicken wings and beef brisket were almost throw away cuts of meat. You could get them for next to nothing. I remeber wings being 19 cents a pound.
