Just get some fryer leg quarters and be done with the shite. There is no way I would go to three stores looking for a chicken that was tougher.

What is better about using a hen? I thought hens were tougher old chickens.

Same problem here in Virginia this weekend. Agree with Cosmo, just grabbed a rotisserie bird.

That’s exactly right….in fairness though, a hen has got more fat on it and fat equals flavor in a gumbo.
