Just avoid the big chains, and you'll find them. For example, in Lafayette, Billeaud's, Early's, Helo's, Veron's, etc.

Don't listen to these amateurs... I use a lot of boneless skinless thighs, and i'll add them to my gumbo mix, to embellish the meat component, but you need the bones and skin of a whole chicken for a perfect gumbo.

I use a whole chicken to make my broth, while in a separate pot, making the roux. I then skin and debone the whole chicken, and discard those, so that the gumbo is easier to eat for my people.

I'd buy a rooster first if I can find it. They use the rooster in more processed soups as they are tougher and won't break down in the Campbell's can of soup so you can still see chunks of chicken when you eat it.

With a rooster I can brown the hell out of it before I start to build my gumbo and cook it a long time without it falling apart completely. Same with a hen.

edit- funny that back then campaigns were ran for the working man and the value of his work... Now it is more what free stuff can you get...

Use boneless-skinless thighs and Swanson chicken broth and/or Knor chicken bouillon. Can't tell the difference in flavor between that and a hen other than not having ugly skin and bones in your gumbo.

I really want to know. Are y’all being serious about just dropping a rotisserie chicken in there? You can get one for $5 from Costco. And that sounds delicious.

You boil the chicken to make stock then use that chicken in the gumbo?

Father went to Walmart early yesterday morning, talked to the butcher because they were already almost out of most things. He said they were down to receiving a half pallet of beef, or maybe meat total, a day.
