Eggs benedict is a great dish and is a pain in the arse to make at home. Im pretty much never sorry I ordered it but at many places the price doesnt justify the food.

I wouldn't make just one or two at home. But making large batch Eggs Benedict is actually pretty easy (with the right tools) and is a great way to show off your skills.

I remember reading in AB's first book that brunch was for restaurants to get rid of what they have left in the kitchen before Monday's food deliveries come. It has never seemed the same for me since, lol.
