This, but…. It is hands down the best technique for perfect shrimp EVERY. TIME.
I too struggled getting all the shrimp to peel. With‘crackers’s technique, even the tiny “skanks”(<40count) peeled easily.

Here's the stalekracker link for convenience- LINK
It's actually how he got his start on youtube. He was at family's house and their shrimp wouldn't peel, so he made a video showing the proper way to boil shrimp as a friendly "dis" to his family on social media, TikTok I believe, and his personality went viral and his kids said "you need to make more of these, you can actually make money doing this" and Stalekracker was born.

A wise man once told me I had had undercooked boiled shrimp before.

Just boiled 20lb yesterday and they peeled great. Got them from a shrimper so they were fresh.
Same recipe as crawfish, just timing is different.
Put in onions, lemon, seasoning and boil for a lil bit(say 5-8 minutes).
Put in potatoes and boil for 10 minutes.
Put in garlic/mushrooms and boil for five minutes.
Put in shrimp and as soon as you see the water bubble start the clock 1-1/2-2 minutes.
Shutoff gas, throw in frozen corn, cool the pot.
Soak for 15 minutes.
Pull em and eat.
If you have shrimp with soft/thin shells good luck.

Boil in plain water, then while they are soaking after you have turned off the fire, put in your seasoning

Got boiled crawfish at Tony’s this weekend. Sad fact, boiled shrimp costs only 50 cents more than boiled crawfish

I saw all the methods below. I have my water very seasoned, boil the shrimp for about 2.5 minutes and then just pull them out, put in ice chest and add more Cajun seasoning and shake it up... Serve
The peelings fly off! Don't overcook them and you can do that with soaking unless you throw a few bags of ice, then it dilutes your seasoning. Frick a soak, pull them out then add seasoning in the ice chest, shake it up and serve

Boiling Shrimp
Don’t boil them. let the water cool down and throw them in with the corn and mushrooms. Shrimp just need a couple minutes in hot water to actually cook. Do not throw them in boiling water and think you can cool the water enough after. They will already be fricked.

quote:They will he difficult to peel. I absolutely never have a problem peeling shrimp when I put them in boiling water, wait for it to return to a boil, and view the bubble/gap form between the meat and shell. Never. They are in that water for at least 7 minutes. Then I cool with bags of ice(ice stays in the bag) and soak for 20. The shrimp shell are exceedingly easy to peel and the meat is firm.

As others mentioned, Stalecracker method has been my go-to for a while now. Shrimp peel perfect every time.
Boil in plain water and lemon for 1 minute then pull and let cool.
Throw the rest of your fixings and seasonings in and boil as usual.
Once the water cools enough to where you can stick your finger in throw the shrimp back in for the soak.
Shrimp damn near jump out the shells themself every time.

old cajun told me this and shrimp peel like butter
Boil water, add seasoning, stir.
Vegetables for 5 mins
cut fire, add shrimp, pull after 15 min.
Keep shrimp on ice until you add to the boil. They come out perfect. DO NOT BOIL THE SHRIMP

Does the size of your shrimp vary the cooking time?

Just be vigilant and pull a few up and look for the gap.

that will determine the amount of time

I find some shrimp are more prone to sticking than others no matter what you do. Not sure why.

This makes sense and I understand this method and the stake kraka method. But when I do a crawfish boil, I like to throw shrimp and some king crab in there too. Is there realistically no perfect way to do all three? Usually I just throw the crab and shrimp in when I cut the fire and they turn out mostly ok.

I peel, butterfly, devein then poach. Never had a bad batch. I do them after the potatoes, garlic, corn and sausage.
