I like potato salad on the side. Scoop a spoon full and dip in the gumbo. I dont like it much in the same bowl though.

High atop. But when they start mixing, it just ain't no good.

And nobody has made it clear, is this room temp tator salad or out of the fridge tator salad?

Eat it the way you like it.

I prefer rice in mine, but I do enjoy some potato salad on the side. I will dip a spoonful into the gumbo and eat it that way on occasion. I don't want it mixed in and changing the texture of the gumbo. I sometimes do the same with a good baked sweet potato. I've never had eggs in gumbo other than the eggs in the potato salad.

This is the ONLY way to do it. People who boil eggs and put into the gumbo clearly have no idea what they are doing. I have a pic of shrimp and egg stew, never took one with my gumbo with eggs when finished, but here's the eggs in the stew.

Both are fine. The eggs are a Cajun prairie gumbo staple. The potato salad is solid also. Also still, the poached eggs are always a hit.

My personal preference is jelly yolk soft boiled eggs that are prepared separately and placed whole in a bowl of C&S gumbo. The yolks melt into the broth and almost give it a creamy texture.

If you want to try something that will drastically change your gumbo game, do the soft boiled egg and add just a splash of sesame oil to your bowl. The peanutty flavor of the oil compliments the roux very well.

I don’t mind taking my downvotes for the sesame oil but I dare some of you to try it on a small sample bowl and report back.

I prefer a boiled egg over potato salad if we’re talking it being in the bowl with the gumbo. I can do either and none at all sometimes. Never in seafood gumbo.

I grew up eating eggs in stews and gumbos. I think it goes back to the depression and a cheap way to add protein to a meal since most people had yard chickens back then

I've done potato salad in the gumbo and it's OK, but I prefer it on the side.

No to the eggs.............and I do like eggs, just can't see it in gumbo.

My mom would always poach a couple eggs in the gumbo. Never thought much about it growing up as I always thought that’s just how it was done.

There's 3 ways we do it. All depends on how lazy we want to be.

1. Potato salad, most effort, but probably the best. Not on top for me, but on the side.

2. Hard boiled eggs. Little less work, but still got to peel those damn things. When I fix a bowl, put an egg in, cut it in half and I let that yolk kinda dissolve in the gumbo.

3. This is probably most common, just crack the eggs directly into the gumbo. For the love of God, don't let anyone touch your pot after that. Someone did that one time and we were eating egg drop gumbo.

I worked with some natives from Dulac who did that with petit pois during lent. Made a pot of green peas with a light roux and dropped some eggs in it.
