Best way to cook boudain

I like to steam then place on top of saltine with Louisiana hot sauce

I rub vegetable oil on the casing and bake at 350 or so until browned. Let cool a bit then slice.
Or I pull it out of the casing and pack into paddies, 1/2 link per paddy, then brown in butter.

Coat it with peanut butter and grape jelly. Then wrap in bacon and grill. Pull it off the grill just as the bacon catches fire and then dip it in marshmallow cream.

BoudAIN is best cooked by wrapping it in aluminum foil and then putting it in the microwave on high for 10 minutes.

It is already cooked. Just heat it up or eat it cold.

If I buy it cold and want to heat it, I bring a big pot of water to near boil, (just til the water smokes on the top). Drop the boudin in the water, and reduce the fire to medium and leave it in the hot water for 15 minutes.

That's the way it is often spelled in east Texas. So, more of a rip on not having Louisiana boudin, I think.

If you don't feel like firing up the grill, do like someone else said and coat the casing in oil (I prefer olive oil) and bake at 350, 10 minutes a side, or until skin crisps up. You can also use the broiler to the same effect as a grill, which will take less time than baking. Just don't put it too close to the flame / coils.
