I can only imagine. LSP uses inmate trustees. It's a coveted job, and difficult to earn I'm told.

Crawfish and yeah I couldn’t finish the biscuit or rice. College try though. Next time maybe double slaw. Slaw was really good ha.

I have no doubt it's somewhere in Lafayette area. Poches and Laura's come to mind.

It's a weak spot in new orleans, as it's more expensive here. However, Hot Stuff was great on both trips there. It's a good verson of the southern meat and three in MS and TN.

I often tell folks, when I'm in the area, Poches is my go-to place. The Smothered Rabbit is some of the best you'll ever eat. Anything Pork is great. Three people can eat off of two plates. Smooth and Creamy Tater Salad.

Another good place in the BTR area, Bergerons in Port Allen.

In BTR, I like the Lunch Specials at City Cafe. Pecan Crusted Chicken Salad, with the Warm Bacon Honey Mustard Dressing. Get the Shoestring Onion Ring to start. For the chaser, Mississippi Mud Pie!

L&M in St. James is the best I've had

Others:
Stockyard Cafe
Suire's (sauce piquante)
Dorothy's
Mr. T's (ponce and tongue are the best)
