I'm partial to Andre's in Erwinville. I think it's the cut. They are sliced thin, so the fat cooks instead of staying gelatinous near the skin. The skin isn't as hard as others because of that too and not having to cook the shite out of it. Jmo.

I don't like them too too fatty, but a good balance of fat and meat is good. Also I like the really crunchy skins.
ETA: I like when you get to the bottom of the bag and you get the extra seasoned pieces of meat that fell off the skin.

It's a 2 stage cook. A guy in Metairie does 1000lb batches, then brings to Gretna. Then they do they high temp flash fry for a couples minutes, then hit with vinegar and their dry seasoning.
If you get it the first couple days when the cracklin and lard are freshest, then it's the best I've ever had. Otherwise, it's still good, but not the best.

I admittedly have not tried cracklins from many places but for sure my favorite so far has been Francis Smokehouse.

There was this butcher shop right off of HWY 90, behind Mon Ami in Grand Marais that had the best gratons. Don't remember the name, could still be there for all I know. Wondering if any of you know what I'm talking about.

I don't why but towards the eastern half of the state most people use back fat, towards the west they use belly fat, I much rather the belly fat.

agree on Toups being very good. Chris' were cooked well but not seasoned enough for me. I found cleaver's underwhelming.

Blue Oak also featuring cracklins on their regular menu. I like the cool ranch style.

No Abe's is a check cashing place with the same boudin as before. Famous foods is on hwy 14 further south
