I used to eat pho often because I was hungover often. I quit drinking and have no desire for pho anymore. It's not just psychological - I just don't think it's that good.

ETA I'll probably eat it again. I just agree with OP- it's overhyped.

Place here makes incredible bun but the bean sprouts are out of control.

I tell them to cut the bean sprouts in half but I still feel like halfway through I'm eating nothing but sprouts.

It’s okay, but on the totem pole of soups it’s very ground level.

Like all other foods, some are great and some are mediocre. Bad pho shops use a powdered base; good pho shops make it from scratch. My general rule of thumb is to look for a place with a primarily Vietnamese clientele that opens quite early. If native speakers aren't eating it for breakfast, then I don't bother with it.

Another indicator is the quality/variety of the herb plate: just beansprouts, skip it. At a minimum, I want basil, lime, sprouts. Better places have greater variety & will include rau ram (culantro), mint, hung cay (spicy mint), ngo om (rice paddy herb), etc. The more variety in the herb plate, the more carefully made the broth will be, in my experience.

Actually, if you want to eat it the Vietnamese way, the hoisin and sriracha would be put in a side dish for dipping.

I made a pho ga in the instant pot on Saturday and it came out absolutely delicious.

Being chicken, you can make a big pot for cheap.

I make chicken pho at home, too. I did a slow cooker version that was tasty; ditto for the pressure cooker version. Only drawback to those: recipe didn't make enough to put much away in the freezer. I like to make it in a big stockpot so I can squirrel away several quarts frozen.

had Pho for the first time at a place in BR called Bao. I wasn't too impressed. the meat was bland and the broth didn't have enough taste (except for mint, the mint really threw me off).

didn't look like some of the pics in here and i didnt add hoisin or sriracha or any of that. i would be open to trying again at a different place knowing that I need to do this.

Me too. I even like to find the 80’s style crab and Brie served in the French bread roll.

Danh’s Garden in Shreveport has my favorite, and I try pho at other places often when traveling. Some are about as good, but Danh’s is still my No. 1.

First step is to add basil, cilantro, lime, and jalapeño from the herb plate to let those flavors get into the hot broth. The broth gets better and spicier as you eat it. I’m not a fan of adding sriracha or hoisin; prefer to maintain the clean flavor of the broth and herbs without muddying with condiments.

a major aspect of pho's appeal is the cost and convenience. a big bowl is like $5, many of the real Vietnamese restaurants are open almost 24 hours (so you can have pho for breakfast at 9am or late nite snack at 3am), and you can dress it up however you like with cilantro, lime, siracha, etc. Also, your order of pho comes out 2 minutes after ordering.

I like pho, but as someone mentioned tom yum is much tastier.

I know some people who like Bao, but I find it to be pretty bland and mediocre. In BR I go to Dang’s. I get either pho or hieu tieu, along with a banh mi sandwich. A bite of sandwich, a bite of soup... doesn’t get much better.
