Anyone make their own mayonnaise?

Recipes look pretty simple.
Oil, egg, vinegar and lemon juice.
Read that emulsion works better by allowing ingredients to come to room temp and add oil drop at a time.
Any other tips? Best oil to use?
Is it worth it? Does it keep for more than a few days?

I do sometimes. I find it to be superior taste to commercial.
The oil you choose will change the taste. Olive oil vs a neutral oil for example. Lots of options.
Look into fernented mayonnaise. Game changer as far ss shelf life. YT has videos.
I would start with fresh and see if you like the taste better. I suggest you add a little paprika, mustard (prepared or powder), garlic powder and/or onion powder. All are great.

Yep. In a jar that it just barely fits in.

t00f has a mayonnaise addiction and makes his own in 5-gallon jugs. Reach out and DM him for his recipe

Some suggest not to use olive oil as the main oil if you go the immersion blender route. The speed of the blender makes the oil bitter. Use a neutral oil, and then stir in olive oil after the emulsion has set.

When I used olive oil, I used a small food processor.
I prefer to use a neutral oil.

My Tips
Use avocado oil for a mild, neutral flavor.
Use a 50/50 combination of white vinegar and apple cider vinegar for balanced acidity and flavor.
Use a whole egg instead of just the yolk. use the entire egg.The whole egg produces a slightly lighter consistency.

All the time, usually so I can flavor it, basil mayo, chipotle mayo, aioli, siracha mayo, dill mayo is a favorite of mine, anything you can imagine. For extra lemony mayo, zest the lemon first.

Stick blender in a jar, when done, you just put the lid on.
