my cousin's grandma from New Iberia used to make an awesome jambalaya that had rotel in it. I wouldn't say it's standard among real south Louisiana cooking (not counting new orleans) but it was still a really good dish.

I love anything spicy, so I like Rotels, not sure jambalaya is a good place for it. I experiment a lot with jamb, not a stiff neck traditionalist who thinks recipes can't improve and evolve.

I haven't heard of rotel, specifically, but as folks have said, plenty of people add tomatoes, so rotel is not too much of a stretch. My preference is the brown version.

Celery is a standard ingredient, though I know a few folks who have an aversion to celery and would probably omit it. I think they don't like it when it's stringy, but you can eliminate the strings easily with a vegetable peeler.

Growing up in Houma we always put a can of rotel. Cook it down with the celery and bell peppers after the onions are good and dark. It cooks way down and you don’t have big chunks of tomato. Never knew any different

ETA: we also made shrimp jambalaya often

Tomatoes don’t belong in cajun jambalaya, and creole jambalaya is an abomination.

As for rotel, my mom used to put a little in her gumbo and it tasted great, and you’d never know there was any tomato unless you saw her add it. She is a heathen from the Frozen Tundra of Shreveport, though.

Celery no, but if I'm making a sausage only jambalaya I add a can of rotel because I like sausage in a rotel (rust) gravy.
You have to caramelize them with the onions though. Great with black eye or field peas.

That’s not true at all.

I didn’t even know what Rotel was until my college roommate from Cut Off, LA introduced me to it - and I grew up in New Orleans (In the actual city - not the ‘burbs) and my dad is from South Texas.

A can of Rotel is great in jamb and gumbo. Sounds like a sacrilege but you’d never know it was there. Great base flavor

If anyone is making a Cajun dish without celery then you can argue it’s not really a Cajun dish. This is equivalent to gumbo without okra.
