The Trinity in Jambalaya is a MUST IMO! Tomatoes not! gross! Almost as bad as dry jambalaya.

Rotel, no. Tomatoes, yes. As a New Orleans native I much prefer jambalaya with tomatoes. The cajun version is usually dry and not as flavorful.

Yes, my bro ads rotel. I don’t, I tend to stick to the Gonzales standard version of Jambalaya, sans tomato product.

I’m not against it, I just don’t do it myself.

As far as celery, all day erday. Though I know a lot of people that don’t. It’s part of the trinity, so why not?

NOLA people love rotel in their jambalaya. Cajuns in Acadiana do not. Baton Rouge wants to be accepted by both, so they sit on the fence...enjoying the wires.
