Anybody Remember Chef Peter Vasquez- Marisol

Theantiquetiger's post about fusion bbq shrimp asian style got me thinking about Chef V from the old Marisol pre-Katrina. That place and his cooking were very inspirational to me in my formative foodie years. Such new flavors. Unfortunately I have never met chef V but his cooking influenced me greatly. I have no idea where he is now but what a loss of a great restaurant and talented chef. Covid is much like Katrina in wiping away talent and restaurants.

Here is a link to a youtube video he made post K which is grainy and low production value, but the basics of fusion cooking are there if you listen to him.

Way worse. Katrina decimated New Orleans and the LA/MS gulf coast. Covid is wiping away talent and restaurants nationwide.

Friend,

I remember when and and his wife, Janice, challenged the legendary Tom Fitzmorris to provide receipts for his dining experience at Marisol back in the early 2000s. This was after Tom critiqued the restaurant on his show. Janice called in and said he hadn’t eaten there in the last year, to which Tom responded he had within the last six months.

Janice replies, “We would have seen you if you had. Everyone knows what you look like. If you did show us the receipts.”

Tom says, “I have them.”

“Oh really. Well I will give $5000 to the charity of your choice if you can show it to me with your name on the receipt.”

Tom hung up on her.

I believe she trolled him a few weeks later when he tried to ignore the callers who asked if he gave her the receipts.

It was peak Food Show listening. One the greatest exchanges in New Orleans radio history.

I follow him on Facebook just to read his posted menus. I wish I lived near just to go pick up some of his food. Sounds wonderful.

They were definitely not friends of the Fitz back in the day. He didn't like them posting on his food forums. Good reading.

I was about to say, he’s working in Algiers. Got a small place that has been doing takeout for years and doing it well. It’s very popular.

Appetite Repair Shop is his Algiers joint. It’s a tiny little corner spot that barely has a kitchen. His food is still delicious, wide ranging, and often sells out. He’s as unvarnishedly himself as ever. Only chef I ever heard self describe his cooking as emerging from a place of rage. If you wanna talk guns, he’s good for that too.

I remember it well. We used to like to go to the place on Esplanade Avenue , especially in nice weather when we could sit on the patio.

One of the best dishes and most exciting matches in that post Katrina Xanadu was when Pete and his wife were running Meme’s in Harahan/River Ridge. He had this escargot pasta that had all those flavors of escargot bordelaise but reimagined. I think about the dish all the time.

Didn’t he refuse to cook crawfish? Pissed people off, but I thought it was funny. I liked his restaurant.

He’s kind of a nut, but aren’t we all? His little place is good. Menu changes daily. If you see something you want, show up when he opens.

Does every restaurant in New Orleans serve crawfish dishes? I think not.
