Thanks for posting the picture of the page from that book. Am I missing something? Why did this make Chef Paul ban him?

I mean Fitz has always been ridiculous but didn't know what this spat was about. I think I'm going to start calling on the weekend if I'm stuck in traffic. Doesn't the show come on regular 870 AM on Saturdays and Sundays?

Yes, 12-3 on Saturdays and sometimes 1-3 on Sundays.

He is also anti heated muffaletta. Says it's wrong.

Aren't heated exponentially better than cold? Am I in the minority? Something about the warm bread and meats and melted cheese to me make it perfect.

Whoever downvotes(Tom), can you explain why cold is better?

I don't recall,but his detractors would post about it on his messageboards and taunt him. He quickly deleted it, but sometimes give a snarly response just long enough for them to see it. It was a game.

True story: you know how Tom begs callers to call in about anything. He's even said that there are no stupid questions, but has added that he has had only one or two stupid questions over the last thirty years. A guy I work with, where I mentioned Tom once, said he called one time. He asked Tom where the best place was to get an old fashioned banana split. Tom told him that was the stupidest questions ever asked on his show. So, i do work with that guy.

He went off on small plates again today. Around 30 minutes into the first hour. His ignorance of modern dining is becoming remarkable.

Salumi are carefully crafted to be perfect at cool room temperature. The fat melts in your mouth in a wonderful burst of texture and flavor.

When salumi is cooked, that melting happens before the food is in your mouth. What you end up eating is hot, greasy, less tender meat.

Agree 100% on cold muffulettas being better than hot...but I fear that too many people have only eaten crap muffs made with garden variety terrible industrial cold cuts. Those might improve when heated, but that's because they're mediocre junk.

Incidentally, I saw muffulettu all over Palermo this past spring: it's what the locals call a round, flattish seeded roll or loaf...not a word for a specific sandwich, but for the bread.
