I don’t have a problem with 1, 2, or 3. 1 better be prime. Also, it’s not blood. It’s myoglobin.

Every person that orders a 4 or 5 then complains to the people they are with that their steak is dry.

Sure. A lot of people mistake myoglobin for blood. And they’re squeamish about eating blood. Not that eating blood is necessarily a bad thing. But they’re turned off by that red color. It’s a psychological hangup. They don’t understand that, whatever it is, they’re still eating it. All that overcooking the meat does is cook off the water and turn the red stuff brown. Even if it was blood, they’d still be eating blood. It’s just dumb.

I used to cook at a restaurant and some customers would order .5 and would get pissed if it was over cooked. Me 2 or a little under.
