If you ever go to Burchard's, don't get the bouillabaisse.

Cassoulet is definitely something I've wanted to cook. Looking forward to you doing it!

If you must go meat, Haggis.

But for something pleasurable, how about Charleston's Plantation Grill Coconut Cake, totally from scratch. Hairy coconuts to start with.

Paella

Second this. If you have a good grill like a BGE or other ceramic do it on that. I do this a few times a year. Brown meats directly on grill. Cook everything else on a paella pan on a grill.

paella goes quick once you get everything in the pan.
for a long cook I’d suggest beef braciole. the sauce can go for hours, prep of the beef takes a while and then the cook time on the beef is pretty long

I like a pot on the stove I can fuss with if I do an all day cook

added! looks amazing.

I've made birria tacos a couple of times. They are well worth the effort. You're gonna like them, I predict.

Charleston's Plantation Grill Coconut Cake

I think you meant the Ultimate Coconut Cake from Peninsula Grill.

My roommate in culinary school worked as a pastry cook there and would make one about once a month in our home kitchen. Good stuff!

I think croissants were the most intimidating thing I have ever tried.

The mother sauces would be a fun challenge.

OK i've added everyones. This has me pumped up. 1st one will probably be the last saturday of january.

I don't typically follow the F&B challenges yall do, but what is a scoring method people use to convey how things turned out to strangers across the internet?

it's a very detailed method of combining Actuarial science with International diplomacy and Metacognitive awareness.

Not really, each individual votes differently based on their preference and observation. No real science to it.

On a serious note, your list is shaping up nicely. I want to cook along on a couple of dishes. If you don't mind, we can post picks at the end of every month. Could be fun to see different translations of the same dish.

Consider Scotch eggs. It's a challenge! We made them last year.

There is a bakery right down the road from me that has the best croissants ive ever had.

If you are ever in Houston, check out Magnol french bakery. Place is so good.
