Best food festival?

Would like to hit up some good ones as I start traveling more in the years to come.
I’ve been to the local stuff: Jambalaya Festival, Stawberry, etc. but that’s about it.
Is Texas the best place for this?

Hogs for the Cause is the beast food festival in the state. Maybe even the best in the southeast region.

Cochon d' lait fest in Mansura, La. in the spring around Mother's Day. Three day fest in Mansura, La., cold beer, grilled corn, funnel cake, lots of slow roasted hogs, dirty rice, etc.
Oak St. Po-boy fest, usually in the early fall. Tons of vendors from all over N.O. selling their specialties, live music, lots of beer/spirits.

Checkout some of the school festivals especially small towns have really good local food....

Hogs for the Cause by a mile.
Jambalaya Fest is a fine festival, but don’t get the chicken “competition” jambalaya, it’s mostly trash. Get the pork and sausage if you can find it.

It’s hard to claim it’s the best in the state or the southeast unless you’ve been to them all. Perhaps it’s your favorite?
