Easy breakfast for 20

Doing about a month of some offsite training for work and we’re encouraged to bring breakfast for the group one of the mornings. Multiple people will be cooking for each morning, so I just need a little something that can feed about 20 or so people. Anything you guys can recommend?

Something like a cheese grit casserole with biscuits/bacon/sausage.
Also, don't be scared to find a taco truck and order about 30 varying types of breakfast tacos.

You can always bring a couple of boxes of frozen boudin and heat them up in a rice cooker. Supplement with some biscuits.

Google crockpot breakfast casseroles. Very easy to do, just dump potatoes, vegetables, sausage, eggs, cheese or whatever you want in the crock pot the night before. Wake up it'll be cooked and you can carry the crockpot in and plug it in to keep warm.

If doesn't have to be home cooked do breakfast tacos from a truck or kolaches.

I'd just do this or order an assortment of kolaches. Add in a fruit tray and you're done.

I was also going to suggest quiches and breakfast burritos. Big bowl of mixed fruit tossed in a little fresh lemon juice and honey. Just a little works fine. (Avoid fruits that turn brown.) Maybe a big bowl of vanilla yogurt with a bowl of granola on the side, so folks can fix a cup of that. We use those clear plastic cups for cocktails for those. Everything can be done ahead of time.

Spinach casserole has always been a huge hit
2 boxes frozen spinach, drained
1-2 tsp flour
6-8 eggs
16 oz container cottage cheese
1lb block Velveeta, shredded or melted
salt/pepper/garlic powder
combine ingredients in order and stir well. pour into casserole dish and top with shredded parmesan. Cook at 350 until middle is set- about an hour depending on how deep the pan is.
You could definitely add bacon, chicken or sausage to this to make it a 1 dish breakfast. Back when we could make breakfast for the teachers, they requested this every month it was my turn.

Buy a bunch of boudin links, cut into thirds. Have a platter of biscuits handy for boudin sandwiches. Steen’s cane syrup on the side.

breakfast tacos are super easy ... tortillas (corn or flour), chorizo or ground deer sausage, cheese, eggs, salsa verde or rojo, cilantro, avocado, etc...
prep the vegetables, brown the meat, cook the scrambled eggs, heat tortillas in skillet (optional) ... DONE !

If you are going to cook for that many people and want recommendations, we really need to know what kind of cooking facilities you will have. Do you have a basic or industrial kitchen? Do you have an office with a microwave and a plug-in for a griddle? Are you campfire and river water camping?

Breakfast tacos for sure. Either self serve with the stuff or make them up (sausage/egg, bacon/egg, and potato egg) and wrap in foil to keep warm. Serve with salsa, sour cream, and cheese.
