Fried cricket at an entomology event. It was crispy fried & heavily seasoned so you couldn't tell what it was.
Ladyfish cakes. I made them myself after talking with the Asians. Pretty good. Made some plain and they are just as good as any fast food nuggets.
Squirrel. Not that weird and tastes fine.

Tete de veau, the contents of a veal head. I had it at Cafe Constant, a very good bistro near the Eiffel Tower in Paris. The tongue and the brains were two of the most identifiable items. It came with a delicious sauce and went well with a good bottle of Bordeaux.
Honorable mention - The next night at a small, neighborhood bistro near the Bastille I had boudin noir, freshly made blood sausage, which was also excellent.
Tow others that come to mind - On a cruise to Alaska I had reindeer and eel. Memorable, but not nearly as good as the Parisian dishes described above.

"Turkey Nuts" in New Mexico. Just a teen, don't remember if it was any good. My Dad also fried freshwater eel we caught in a creek on a limb line. It was good!

I went to Vietnam about 20 years ago. I remember soooo much good food.
Standouts:
Water Buffalo steak was 10/10. We went back for that several times in the month we were there.
Cobra wine. Yuk. It was a liquor that they made from male cobra sex organs. It tasted like cheap tequila but it was oily and you couldn’t get it out of your mouth.
I ate a sandwich from a street vendor that was made with egret. It looked a lot like turkey but tasted like something else. 7/10. I would eat it again if the opportunity presented itself.
At one place in the middle of the jungle, we had dinner with a local community leader (still very poor). They made a big deal about white people being that far in the jungle. They had a pot of boiling oil of some type and they dipped a rather large koi tail first into the oil. The guy had a towel wrapped around the fishes head to keep a good grip on it. The fish flopped around for a few seconds and eventually stopped. After a couple of minutes, they pulled the fish out and laid it on the table in front of us. They unwrapped the towel and the gills were still flapping. They then carved the meat off of the living fish, threw some kind of seasoning on it, and served it to us. Animal cruelty aside, it was very good. 9/10. Would not do it again voluntarily though. I can’t get past the needless torture of any animal.

Had a friend from Iceland give me some to try once. That was...an experience.
"Weirdest" actually good food I've had was horse like others have mentioned. Had it in Italy. One of the best meals I had there.

Bear...not bad, but a bit gamey and greasy.
Ostrich...awesome. Looks and tastes like filet.
Nutria...really good. Fresh tasting. Texture kinda like pulled pork.
Would eat ostrich and nutria anytime. Keep the bear.

But I have to say, one specific cow tongue is what comes to mind as the weirdest thing I have eaten. I was at this Argentinian Steak house (one of my favorite spots) and ordered the Lengua a la Vinagreta, which is poached tongue marinated with vinegar, garlic and pepper. I was expecting lengua like what's in tacos, but what I got was a whole cow tongue, taste buds and all, sliced but plated in anatomically correct position, and served cold.
There was a mental hurdle with that presentation that was hard to get over.
