Vegan Po’ Boy

Washington Post had an article about how tofu sales and recipe searches have skyrocketed this year.
That led me to poke around, where I came across a vegan blog (by a lady who used to be an IP lawyer) with a recipe for a tofu po-boy. LINK Her intro cracked me up.
That first sentence killed me, and the rest is entertaining as well. That said, the to-boy (I should register that as a trademark) actually looks decent in the pics.

It’s now fifteen plus years later and I’m finally getting around to making my own version of that sandwich. I knew I was onto something while the tofu was cooking and that peppery Cajuny aroma that I remembered started filling my house.
It turned out pretty spot on, and absolutely delicious, which is really no surprise. Can you really go wrong with crispy tofu with Cajun spices in a big, sloppy sandwich? Probably not.

Those pickles look wrong. Maybe if they used some of those toothsome Boar's Head pickles....

I'm a hostage Vegetarian/Pescatarian. It was my wife's choice with one stipulation. If I ever went to bed hungry from this cooking style, then it was OUT. That was 4-5 years ago. It's really not a bad way to eat. I get my meats when we eat out and I still have deli meat for lunch, etc..
We had some vegan comfort food from a place called Kindred here in NOLA last week. It was fricking delicious. It was the first vegan restaurant I can recall where I actually thought, I can't wait to eat here again.

Vegan Friendly Foods in BR has an Oyster Mushroom poboy and it freaking rocks.
I am not vegan but find most of their food to be good.

I haven't seen them in a while, but the Vegan Meets Soul foodtruck always has a line when they're downtown.
I'll probably not ever try it because when I'm eating out for lunch, I'm going to get a Cuban from Caribbean Express 9 times out of 10.
