Do you use evaporated milk in your cooking?

It's one of those things I sort of forget that I have at times. I used some as a creamer for my coffee earlier because I didn't feel like running to the store.
If I have it on hand I usually use it as part of my custard base for bread pudding.
I'm convinced that it's probably an under utilized tool in the arsenal of most home cooks. Where can I put this to more use?

Love evap milk. It’s my daily coffee creamer and has been since I was a kid.
I also like to pour some over strawberries w/ a little sugar. Other than that I use it pretty regularly in any cream based dishes.
But yeah I use it all the time and it’s definitely a staple at my house

Mashed potatoes
Excellent when used in mashed potatoes along with real butter, a bit of salt and pepper to taste. The potatoes whip up nice and creamy with those ingredients and have a smooth, rich flavor.

Same. Couldn’t even tell you where it is in the store.

It can be found in the baking aisle
I don't understand the science of it but it is the superior choice to fresh dairy in many cooked dishes

I usually keep a can in the pantry in case I make Paul Prudhomme's Cajun Meat Loaf. It calls for 1/2 cup.

Isle 12, middle of shelf on the right side (store front or produce dept. - depending on whether they run the shelves side to side or front to back). Always right beside the Sweetened condensed milk. Really close to the powdered milk and the flan in a can.
Really good stuff. use it for milk if you want the results to be richer and more creamy. Suggested uses pancakes, waffles, sauces, gravies, casseroles, cheese dishes, any tater recipe, stroganoff, coffee.

Huh. Never tried making a gravy with it. Sounds like something I need to try.

I'd imagine it would make gravy a snap
It has the benefit of having fewer calories of something like heavy cream but it won't curdle like milk and you still get the taste and the mouth feel that you're looking for

I was googling different uses for it and evidently it's good for making home made ice cream and keeps it from getting too "icy"
