I keep it all the time because it is shelf stable and I never buy regular milk. Cut it with water if you need milk and not cream in a recipe.
I am fine with any leftover used as coffee creamer or poured over berries or bananas.

My aunt uses evaporated milk in her pralines and they're the best I've ever tasted.

This...though I drank tea as a kid (because that’s what my dad drank) then switched to coffee later. But I use it in both.
