If you're coming from Miami you should do a day at Disney World
Or stop in to see the liberty bell if you're passing through Philly
Maybe swing by a brewery or vineyard in Oregon on your drive down from Alaska

Double check what is all opened at the Grand Canyon right before you leave for your trip. Right now they only allow people in at the South Rim entrance only from 6-10 am and there are no places there to stay overnight and you have to bring in your own food, water, and supplies.
Nothing else is currently open at the rim (Grand Canyon Village shops, restaurants, hiking trails, etc).

I'm assuming you are coming from Hammond
Sedona, AZ was pretty cool. Rent a jeep for 24 hours and go riding on some trails.
Maybe a side trip to Austin, or check out some wineries in Fredericksburg.
Marfa, TX, I've never been there before, but I've heard cool things
We flew into PHX and drove up to Sedona, and did a day at GCNP because my wife had never been. It was cool seeing the line where the Saguaros basically start/end.

Prescott, Sedona, Jerome and Williams, AZ are great places to see in addition to the Canyon.

"Standing on the Corner in Winslow, Az." Bronze statues of the Eagles for pictures. Cool stores around the square. Right off of I-40

Go to National Parks Trip Media and search for things related to Grand Canyon. Sign up for the emails. They are always sending me emails about things to do near the parks, great drives along the way, or lesser known parks near the more popular parks.

If you are driving from Louisiana I'd say Carlsbad caverns wouldn't really be out of the way too much and it's amazing. Kartchner caverns is near Phoenix and cool as well.
Sedona as mentioned is a great visit, if you go there I highly suggest hiking Oak Creek canyon.
If you are hitting grand canyon you could go a bit farther north and hit antelope canyon as well.
Jerome is a cool old mining town that I hit occasionally when hitting wineries in cottonwood and page springs. It's just south of Sedona.
Tombstone is fairly convenient to hit if you are coming in to the state via the El Paso way.

If on 40 you can also check out Petrified Forest NP, just east of Winslow. Exit 311 puts you at the painted desert entrance. The main park road then dumps you out on US 180. Take it west and hit 40 again at exit 286.
Between Winslow and Flagstaff is Meteor Crater.

We loved this place, great stop for a picnic and short walk. Bonus: the short jaunt south is significantly more pretty than the interstate, keep on it and go back north in AZ vs NM.

We did the same route. Almost ran out of gas in the jeep. Its further than it looks on the map. That reservation was kind of depressing though
