I'll give you one that I was looking forward to, but was rather disappointed in:
US 1 Overseas Highway to Key West.
Yes, you do have some neat spots like this:
and this:
Those were the spots I enjoyed last May when we rented a convertible jeep in Miami just for the drive down.
But here's the deal: most of the route is over land (the actual Florida Keys) which are pretty well developed, and NOT so scenic. Traffic can also be an issue; the majority of the route is just two lanes, one in each direction. The drive down wasn't so bad, but the drive back was a mess: accidents causing back-ups, huge volumes of traffic bumper-to-bumper; at one point we barely moved for almost an hour.
And last year, you had this ungodly STENCH from tons of rotting sargassum seaweed that had washed up all over the beaches of South Florida. If you were anywhere within a hundred yards or so of a shoreline, you could smell it, which meant when you crossed the islands, you got gassed:
====
Ah yes, "El Camino del Rio". Drove that in my white 1992 MX-3 back in November 1996.
An absolute blast of a drive with a sports car like that; curves, hills, lots of nice turn-outs and stops, beautiful scenery. At one point just for fun I pulled over, took my three iron and a few old golf balls out of the hatchback, and played the Rio Grande like a water hazard, hitting balls into Mexico.

I've done Black Bear Pass a few times. You aren't human if you don't white knuckle that pass the first time down.

US 74 west of Asheville down through the Great Smoky Mountains past Bryson City, the Nantahala Gorge and over to Andrews and Murphy, NC. Drive it any chance I get.

I would add Glenwood Canyon in CO. It's pretty spectacular when you drive it west bound in the evening with the sun playing off the canyon walls. Best driven with an open sunroof.

Road to Hana (Hana Highway) on Maui
We had an interesting time on this one. We were about halfway back when there was a huge mudslide that blocked the road. We had to go all the way around the island......at night. My a-hole was puckered tight.
We took that route on purpose in the daytime, and it was still nerve wracking. No paved roads, going around corners on cliffs on roads that can only fit one car. You have to pray no one is coming the other way. Rental car contract insurance is void if you screw up the vehicle on that road. At least there's a rail in this pic.

In the US, Trail Ridge Road in the Rocky Mountain National Park is quite a drive.
Highest paved road in North America. Here's a view from the observation point near the peak at over 13,000 feet.

Terribly underrated is Utah’s Hwy 12
Solitude my friend.
And yeah, it’s all the same road. Probably gets up to 9,000 ft or higher.
