Picked up an 11+lb Butterball from Costco for .99/lb yesterday. It was still partially frozen. It's sitting in the bottom drawer of the fridge. Going to spatchcock it and apply a dry brine on Monday. Smoking it at 350-375 on my egg Wednesday evening.

It's actually due to decreased demand the last few years, which led to decreased turkey raising, which has led to a decreased supply, with a similar demand, this year compared to last year.

Organic turkeys at Costco yesterday 2.99 per pound

We had a guy at work that used to fry everybody’s turkey. He would put a crawfish boil marinade inside the turkey. He doesn’t work here anymore.
Anybody have a recipe for injecting turkeys. I would imagine you would have to mix the crawfish boil with a regular injectable marinade. I would imagine if you injected it straight into turkey you would set your arse on fire

Quantities vary depending on how many birds I'm injecting. I'll put all ingredients in a pot and let that simmer for at least 15 minutes to blend everything together. Then I strain it and allow it to cool, then use the injector to shoot up the turkeys. You have to mix it real well since the butter wants to rise to the top of the liquid, but it is doable.
I will thoroughly dry the outside of the bird to get off the water, rub the skin with olive oil and season the outside with Slap Ya Mama, black pepper and a bit of garlic powder prior to frying.

That sounds freakin delicious.
I gonna borrow one of those Big Easy propane turkey fryers after thanksgiving and cook a bunch of turkeys till I get it right
