Had Some Paella from NOLA Paella Tonight at the Ochsner Farmers Market

Man, it was pretty good! Scallops, shrimp, mussels, chicken, etc. I have never had paella before, but I would definitely have some again. Told them I was a Jambalaya guy, but they were very nice.

A well made paella is not easy to find, but it’s one of my absolute favorite meals.

I’m trying to learn how to make it now. I think I will buy one of those big pans as I see it as a useful tailgate skillet as well.

There is a food stand that makes it every Saturday for the Farmer's market here in downtown Cola.

Real deal too. Huge paella pan under a special built propane rig. Damn good, and the wife says it's on par with what she had in Spain when she lived there.

Gotta catch it when Chef Avelar runs a paella special at Meril. You’ll see Alvin Kamara in there eating it almost every time

It should have a little bit of crisp on the bottom layer. That looks very well done.

I was going to ask about Lola's. We haven't been in years but it was a favorite of ours when we lived in the area. Was always a cool experience to go across the street to the wine shop and pick out a bottle of wine and then bring it over to Lola's for dinner.

It's pretty similar. The biggest difference is infusing the saffron into the chicken broth. This gives it the unique flavor and yellow color.

When I make mine I use andouille sausage instead of chorizo due to personal preferences. I just call it my cajun paella. The best way to make it is on the grill outside.

I will chime in to say Paella made with leftover crawfish, a good shellfsih stock, and andouille is a very good idea.

Interesting. I've never cooked with it because it's fricking $30 for a tiny jar. shite is literally worth more than gold per ounce.

A tiny bit goes a long way. Gorgeous yellow color, delicate fragrance, and absolutely necessary to certain dishes. You can find smaller amounts than a $30 jar...Trader Joe's sells tiny amounts in a jar for $6, if you want to give it a try.
