Like 30-40 chinese restaurants in 9 different provinces in china. Sichuan and Hunan stood out...so did Wuhan in Hubei.
I had an 11 course dinner in Yhangzhou in a private residence that was astounding.
Holee Fook in Hong was incredible.
Mission Chinese in San Francisco and food stroll in Flushing for America.
Not sayong it authentic at all, but Maypop does a great job of capturing the complexities of Asian flavors here.
ETA:
Xibo in Shanghai may have been the best. It served food from Xinjiang.

Sinh Sinh Hou Chinatown for all around consistently very good food. Went last night and had dinner with out of towners. Beer and black pepper lobster, salt crusted shrimp, won ton noodle soup, imperial rolls to name a few

This place in SF China Town, R&G I believe. Not sure if it was the food or just the experience. Brought a client there at his request. He's Chinese and wanted to do the whole "be my guest" experience, so he ordered for us, poured our tea, etc. This place also had a pretty awesome fried whole crab.

Holy shite, that's random

I have nothing to add to this thread since the best I had was when we ducked into a restaurant in San Fran Chinatown when it started raining. Asian clientele and menu was not in English. Don't remember where we were and definitely don't know what we ordered (basically pointed to things on menu). But DELICIOUS it was!!
And is a cool story/memory.

4th vote for...
God, I love Peking Duck. It’s quite possibly the perfect food.
Another great one is Frank Fats in Sacramento. Been around since the 30’s I think.

I have been to the R&G Lounge too. It does rank up there. Great Eastern in S.F. was good. Food was delicious at Yuet Lee although it does not have much atmosphere. Favorite Chinese cocktail bar: Li Po Lounge. That place does have atmosphere.

By far the Shanghai Dumpling House in Millbrae, California, about 15 miles south of San Francisco. They are known for their Xiaolongbao (soup dumplings). My work partner for 20+ years is 1st generation Chinese-American. She took me to this place years ago and it has remained our groups favorite over the years.
She taught me if you want the best and most authentic Chinese food, make sure that're in a predominantly Asian neighborhood and when you walk into the restaurant that there are hardly any non-Chinese people eating there, there are no forks (only chopsticks) on the tables and there are handwritten menus in Chinese on the walls. Her advice has always been spot on.

Place is flat out horrid now. Hard to think of another place so good going so far to shite as that place has. Last meal I had there couldn’t hold a candle to Panda Express.
