Portabella mushrooms are like meat to vegans and can be roasted, grilled, sauteed etc...with little effort.
He was planning to grill steak.
I season the portabelas the same way and grill them beside the steak. Drizzle with a little balsamic and my wife loves it.

That's not how this works
I have decided to keep the peace, and I found what appears to be a good looking lentil soup recipe from Alton Brown. It gives the option of vegetable broth or chicken. I'm doing chicken broth just so I get the last laugh.

Except that putting butter on anything renders it non-vegan. Try olive oil instead.
Oh well...I'm not an expert. Good call.

That's fricked up, like seriously fricked up.

I agree. Just tell them you don't want to do it rather than resort to that.

That's just mean. Just order a vegetable pizza with no cheese rather than be ugly about it or cancel the whole thing. This is family.

Just Google easy Vegan recipes and make something. It's not hard.

Cook your regular meal with a vegetable side dish and let her eat the side dish.

Okay, well, that changes things. Next time, I might tell her that I arranged last minute for vegan foods for you and you cancelled last minute. I'm not going out of my way. I'm sure I will have a veggie side or I can order a veggie pizza for you once you arrive.

My wife is basically pescatarian. She just loves animals. Whatever...pick your battles. If you invite us over for dinner with the main course being a meat, she'll just eat apps, salad, and the sides.
If I know ahead of time what we're eating, I'll at least give the host a warning not to waste their money buying her a steak or something similar.

Papa Johns regular/original crust and Little Caesar's without cheese are vegan, if you're in a last minute food prep situation.

For those times when you feel like you keep having the same meals over and over, try a meatless meal. One day per week, prepare something without meat. It doesn't have to be completely vegan. It opens up a plethora of new recipes. You will discover a few new favorites, and the next time you host a veggie you will have something you can make that is familiar to you.

Yeah, my question to OP would have originally been.. Did these people request this? Or is the vegan thing just something you already knew/someone else told you?
Anyone I know who is vegetarian or whatever just shows up and eats what they can at parties. I've never seen them call ahead and request dishes that meet their diet demands.

No, you don't have to. She can bring her own stuff.

Google a vegan recipe, make it for her, and add a little bacon drippings to it just in case.
Just in case if she shows up wearing anything that comes from any animal, for instance, leather shoes, belt or purse. After she tells you how good it was, mention the bacon drippings.
She'll love you forever.
