Altering your menu for certain guests

So, my mother in law and sister in law are having dinner with us tonight. Sister in law is currently on a vegan kick because she watched that dumbass what the health sham.

Not that I was planning on cooking bacon-covered steaks, but now I have to come up with some vegan dish to make.

Not okay.

I agree, it's a PITA when a guest suddenly adopts a restricted diet and wants the whole world to accommodate him/her. But in the interest of family harmony, it's not too hard to make a big tossed salad and a loaf of nice bread; she can share in the meal & have something on her place without your needing to alter any of your other menu items.

If you have an Asian market near you make Japchae leave out the beef and egg to make it vegan. What they don't eat serve for lunch tomorrow.

My reaction to things like this is directly related to how I feel about them. It's usually somewhere between "F that, tell them to bring their own good," and, "absolutely, no problem. Let me look up a fun and interesting recipe that works and see if I can pull it off."

Serving a vegan isn't that big of a deal. Vegetables. How hard is that?

Green beans.

Green beans with butter, salt and pepper. Old southern.

Green beans with butter, pepper, soy sauce and sesame seeds. Asian.

Make a nice salad. Steam some asparagus. Make the whole roasted cauliflower from Dominica which I do a lot.

Except that putting butter on anything renders it non-vegan. Try olive oil instead.

Don't alter the entire menu. Make a completely separate dish just for the vegan. That way she can see how much of a pain in the arse she is.

We had relatives coming from out of town and had a meal planned for about 20 people or maybe a few more. Found out somewhat last minute that two were vegan. We were already having a variety of vegetables like roasted asparagus, roasted white and sweet potatoes and several salads. We added an eggplant dish that wasn't hard and was sort of like an entree to them. We put out guacamole for them and one of them ended up splurging on the deviled eggs. They both shared a dessert even though it wasn't vegan. We had some sort of vegan dessert, but I can't recall what it was.

It's pretty easy to roast a bunch of different vegetables and throw a salad together. Portabella mushrooms are like meat to vegans and can be roasted, grilled, sauteed etc...with little effort.

I can understand food allergies, but going vegan and gluten free and expecting people to cook for you is dumb

Quick,easy and good vegan meals include falafel....you can buy falafel mix at whole foods, add water, form balls and fry....serve with pita, hummus, lettuce, pickles and tomatoes. Kimchi fried rice is another good meal.....buy kimchi, saute with onion, add cooked rice to the skillet and cook for 5 minutes. I usually roast brussels sprouts to serve on top of it.

Do a sort of rice pilaf with jasmine or basmati rice, diced sweet red peppers, mushrooms, sweet peas, and some kind of nut, like pecans, walnuts or pine nuts. Season it with a little bit of kick. Everyone will want some.
