Parmesan reggiano.
It's not just my #1 favorite cheese...it's probably top 3 favorite foods.
My wife and I plan on visiting Italy one day, and I will not go unless we have the money to be part of the first cracking of a parmesan cheese wheel and sampling it fresh at the factory.

Having done that I can absolutely assure you that it is worth every penny. One of my all time favorite experiences.

I guess I haven't had good Parmesan yet. I love cheese but that one has always been on the bottom of my list. Where can I get a good sampling of this? Whole Foods? Rouses?

This is like asking me what my favorite beer is. So my answer could/would change if you ask me again tomorrow.

Smoked provolone. One of my go-to foods when I'm in a hurry and can't make something healthy is an ovengold turkey sandwich on country Italian bread with 2 slices of smoked provolone. I'd put it on everything if it wouldn't make me a fatty.

I agree with the Parmigiano Reggiano mentioned earlier. However, just to come up with a different answer...
There's a cave-aged Gruyere cheese sold by a local supermarket chain (King Sooper) that is just out of this world. Creamy, nutty and mellow with some amino acid crystals to give it a slightly crunchy texture. I want to make some French onion soup just to use some of this cheese in it.

I'm not a cheese expert, but I love going to the creameries and buying/sampling cheeses. Face Rock Creamery, Rogue Creamery (not related to the brewery), Tillamook, Willamette Valley Cheese, etc. It's great.
Still hard to beat a good aged cheddar, in my book, when you're just eating cheese. It doesn't melt as well as other cheeses, but I love eating it by itself.
