Brunch is an example of excellent marketing. All you have to do is pair extremely cheap food with high prices and tag bottomless mimosas and bloody marys. Put your brunch restaurant in a trendy (preferably open and airy) environment to afford the patrons the opportunity to gossip over who slept with who, talk shite about others not at the table, and speak of other's personal affairs.
Instead of enjoying a good meal with family and friends, people gather to gossip over poached eggs, French toast, or a strawberry salad. It has become the epitome of America's vain and narcissistic culture.

People look funny at you if you're knocking back 3 finger vodka drinks at breakfast. So you find yourself spiking water bottles with Takka the night before, pouring half your OJ under the breakfast table and mixing as best you can without drawing attention to yourself. It's way too much hassle. Just wait a couple hours, call it brunch and nobody bats an eye at you double fisting salty dogs and IPAs at 10am. It's brunch, by God.

He has a point on losing the simplicity of good foods.. i.e. fancy sliders
And cuts of beef are nothing if not prepared correctly.
But brunch is a great meal.. not the excuse to drink, or left overs being utilized well..
But what the local kitchens do to try something new with local ingredients.. brunch is actually so popular that it's the main reason you now have a soft boiled, or fried egg on fricking everything. It's why a donut is now being used as sandwich bread. It's why bacon is now a big component is sauces..
I love and hate bourdain. He is a good writer. He did a great job helping you picture a 90's pre-celebrity kitchen atmosphere..
But as a chef , he is a hack (his words, not mine) but umm willing to bet %80 of exec and sous chefs could out perform him.

I think you might be stereotyping a little too much here. My wife and I go out for brunch nearly every Sunday. Of all the places around Bham we have tried, we like Waffle House the best. Trust me when I say this, but there's NO ONE there that meets the description you described. Just a bunch of moderately hungover adults like myself enjoying some greasy comfort food to set us straight.

I just can't get over the whole brunch thing. Brunch is an American institution.
Maybe this little fig dislikes breakfast, or drinking for 2-3 hours before lunch on the weekend, or people who choose to eat and drink for 2-3 hours before lunch on the weekend.

The real issue is he is using facts from 20 years ago to maintain a stance. 20 years ago or even 15 or hell 10 years ago, the restaurant scene in America was vastly different. Filled with lots of places that were cooking similar menus without much thought or care. Brunch doesnt just mean dump hollandaise on everything left after Saturday night service. It might have once, it doesn't anymore.
But now food is a form of cultural currency. Being a cook or a chef is a different career than it was when he wrote Kitchen Confidential. And many restaurants (especially in cities like New York) have to rely on the revenue from a solid brunch to make the numbers work.
Brunch can suck; but so can any other meal at any restaurant. It can also be a really great experience.

This is just a typical hyperbolic riff. His hatred for brunch is likely stemming from his perspective as a chef. Switching between brunch and lunch/dinner service is a pain in the arse for the kitchen. Plus, you have to get up early, which most kitchen staff hates.
Bourdain is still a solid essayist though.
