Good barbecue is smoked, low-and-slow. Best option is one with a larger offset smoke box, that way you can grill over that part, while smoking the rest of the pit.

Are you catering large events or competition cooking, that really the only reason I would think to pay extra to get a custom grill/smoker built. There are probably many commercial built grills/smokers that would fit your needs.

The ones outside buccees in baytown were solid. Not sure how they cook. $1k for the big one. Bring a trailer cause you ain't lifting that shite into the back of a truck.

Blaze grills is coming out with a solid aluminum Kamado. It's should be available in a few months. I would wait to see what this thing is made of. The target price I believe is going to be around your budget. I have seen it and seen it cook. Seems pretty legit.

If you don't buy a Webber three burner your doing it wrong. The most important thing about a bbq pit is buying a cover. My dad still has a Webber gas grill he bought in 2003. Not even fricking around. He cleans the inside thoroughly once every six months. The fricking automatic starter just went out less than 6 months ago.
