My dad does it routinely with fish. The holier than thou fishing types in S. Louisiana who eat nothing but trout and redfish, my dad will serve them sheepshead, drum, etc and they can't tell the difference.

I have a niece who has celiac disease. Nearly died as a child. I had a nearly deadly allergy to citrus as a youth, nearly had to be rushed to the hospital when someone "forgot" to mention they had used lemon in a recipe.

Thankfully I don't have any friends or family that are vegan.
But if I did, I would respect their food preferences and not try to trick them into eating something they don't like.

I know someone who has an allergy to meat from contracting Rocky Mountain spotted fever. She doesn't usually explain that she has an allergy to people she just tells them she doesn't eat meat. I guess she assumes most people aren't such dicks to slip something in on someone.

I once gave a lady regular coffee instead of decaf because decaf needed to brew and we were cleaning up
hope she made it home alive

What if they do like it though?
I've snuck zucchini squash into cookies for kids that "Don't like vegetables" too.
Pickiness is 90% in your head.
Most People can't tell the difference between "organic" and regular (they both grow in the ground.)
But if you serve them "organic" something, they'll rave about how much better it is.
Even if there isn't a damn difference.
