Nah I get that. Im in BR and dont go to Nola as often as I should so I would have to try the interesting/rare things.

frick the haters. Goat isn't necessarily 'exotic' by any means...at all...but it's strangely hard to find in this city. So if i'm going there, I'm not going to eat chicken tacos.

I just walked into Johnny Sanchez and asked if I could eat at the bar. Place was about half full. I was told they were not accepting any more walk ins or reservations for the afternoon (it was about 1 pm). But if I come back tomorrow I'd be welcome and could sit at the bar. ???

What does this tell us? Still getting their shite together? Problem in the kitchen? Problem with running out of food?

Weird.

Maybe just trying not to overwhelm their kitchen on the first day? I don't know, but I surely trust Besh and Sanchez have it operating how they'd like.

Just ate lunch there. Everything was delicious. I had the carnitas tacos entree with the quesadilla, a mole dish with chicken and tortilla chips, and the guacamole with deep fried crickets appetizers.

Aaron was there and he came up to our table and took a picture with my co-worker who is a self proclaimed "foodie". She had contacted him on Twitter or something like that. Nice guy.

The meal was comped because this is still their soft opening. I will be going back.

that's actually a genius move IMO…they KNOW they are going to print money…so why not just have soft openings without every table being full and get your shite straight before you get slammed. of course this is all just assumptions

Besh may have learned that from Pizza Domenica as they've had some service issues since opening due to being slammed non-stop.

the key is communication…a simple we don't want to overwhelm our staff and kitchen during our first week open would be fine with me…but if dumb blonde in the front just says sorry can't come in, then it'll likely leave folks wondering wtf like VOR

Didn't think about a soft opening in the moment (because, of course, my needs and desires are paramount), but that explains it.
