Can't wait to try this out, but I have a question.
What do you do if you're cooking a batch in a 7qt pot and one of the ingredients calls for 1.86 cups? Or strange measuring amounts?

You just have to estimate it. For most any ingredient, if you're a little off, it won't be noticeable and certainly won't be a disaster.

I'll bet you're a good enough estimator to avoid that. Measure 1 cup. For the 2nd cup, fill it, then knock a little out of the top so that it looks about 86% full. Not really that hard.

Anybody got a ratio of temple meat to andouille they like to use? I was thinking somewhere around 60/40

My recipe comes out to about a 70/30 ratio. I base all my ratios off of the amount of rice I'm cooking.
lbs. of rice * 1.5 = lbs. of Temple meat needed.
lbs. of rice * .6 = lbs. of sausage needed.
I cook mostly big pots (15,20,30 lbs of rice) and these ratios are a just convienient. Temple meat comes in 30 lb boxes and sausage usually comes in 3-4 lb boxes so it just makes is easy and cost effective.
