I can barely go to lunch for under $2,000. You may just want to hit Beau Rivage breh.

You could probably do St John for less than $3000.
$2000 is going to be tough anywhere because airfare will eat up half your budget.

Flights alone to any decent Caribbean country will be $800-1000 unless you have a direct from your city or want to go to Mexico. All inclusive a will run $150-200+ per person per day. So that's about $300+ per night. Find a cheaper hotel and then you have to pay for food and drinks yourself. You can get by for $3k but not $2k unless you go cheap in Mexico or maybe Dominican and get a flight special.

Unless you use credit card point or something like that for flights.

That sounds like a terrible honeymoon in any month, much less January.

and NYC would more than likely be more expensive than $2k

Yea, some people really just don't know how to shop.
I'm currently looking into the Bahamas on vrbo for December/January time. 4 of us to stay in a 2 bed 2 bath beach house is 1200 for 5 nights. Flights are under 400 a person. So total I'm looking at less than 2800 for 4 people.

You can do it but airfare will make that number unattainable.
Are you wanting just to lounge at a resort, drink alcohol and frick a lot? I mean, that's the typical honeymoon, but if you're up for something a bit more adventurous or a bit different...
I say make a road trip out of it.
Assuming you're coming out of Louisiana....
Do a tour of the coast:
Part one - Drive to Destin, 30A, or Panama City. Stay at a $150/night hotel, walk the beach, eat some food, have sex a few times.
Part two - Drive to Suwanee State Park. Camp or stay at a nearby hotel. Go hiking for a day. Maybe canoe if available.
Part three - Drive to Tampa. Stay in Clearwater. Go to Busch Gardens.
Part four - Drive to Orlando. Pick a Disney Park and go for the day.
Part five - Drive to Miami. Hit the beach where the weather could be fairly warm. Maybe go as far south as the Keys.
Part six - You could fly home from Miami or if you still have time and the desire, drive to Daytona. At this point, you'll have been gone though for 6 days and may just want to fly home.
I think that would be a fun trip. My honeymoon was spent at a Sandals resort in the Bahamas in November. It was cold, windy, and claustrophobic. We had a bunch of sex, drank some crappy cocktails, ate decent food and wished we had done something more adventurous.

I would kill my husband if I had to do that much driving on our honeymoon

I would look at Costa Rica. There are direct flights from DFW, and I'm sure plenty of other US airports. Pretty cheap accommodations and hanging out on the beach doesn't cost any more than the beers you drink. I've heard of people going to Turks & Caicos on the cheap, but flights there are brutal.
ETA: my dad told me about his first honeymoon in 1962 - he and his bride drove to Acapulco... through Mexico City. Probably avoid doing that these days.

And a road trip for a honeymoon? No thanks.

We did Playacar palace in playa del Carmen for $2300 for 5 nights. All inclusive with a $1500 resort credit that they offered if you stayed 5 nights or more. We used the free credits for a nicer room upgrade, spa treatments, romantic dinner on the beach and some tour excursions.
We went in December

So you're just choosing to ignore the part of his post where he says he has the money for a $5500 trip?
