Worst gumbo mistakes you've seen

I'm a cajun from S La. and grew up on gumbo. I make it a lot. But up here in Shreveport I've had some awful gumbo by non-cajuns who were trying to impress me.
Some examples...
a. gumbo with NO roux. Kind of like soup.
b. gumbo with tomatoes.
c. instead of chicken and sausage, one guy made chicken and weiner gumbo.
Anybody got some stories on bad gumbo?

Eh, not really a mistake, just the creole style of gumbo. I prefer cajun gumbo, personally.

Burnt Roux..
Too thin or too thick.. IMO Gumbo should not sit on top of rice..
But the worst I have EVER seen was it being served on Top Chef TWICE (two diff chefs) over grits!

went to a nice restaurant in Buffalo, NY
they had "louisiana creole gumbo" on the menu. So I order a cup and they brought me a cup of some sort of brown tomato soup with pieces of chicken and sausage in it. Was easily the worst soup I have ever had in any setting

Weiners only belong on hot dogs
They have no place anywhere else ever IMO
I had this gf a long time ago that made me weiner spaghetti once for my birthday (I took her to Ruth's Chris for her birthday on what little money I had from waiting tables)
Needless to say she was history shortly thereafter

Brother-in-law once accidentally used powdered sugar instead of flour to make his roux. Looked like a beautiful roux. Taste? Not so much.

This is a mistake you will only make once.
Seafood gumbo, shrimp, crab, & okra gumbo in a black cast iron pot.
The acid in the okra reacts with the black iron and turns your gumbo black.
Nasty looking!!!
Actually doesn't really affect the flavor but I couldn't get past the ugly presentation.

Where the hell are you eating at? FWIW, I have had the best gumbo ever in Shreveport.

I think it's a mistake to mix seafood with meats, but some folks like it.
The worst for me is seafood that has been cooked into oblivion before serving. You add it at the last minute. You do not simmer seafood gumbo with the seafood in it, all damn day long. Some restaurants just don't get that. Many do, though, and they make the gumbo sans the proteins, and add the seafood to the individual bowls/cups just before serving. This is the RIGHT way to do it.
I love turkey gumbo after Thanksgiving. I buy an extra turkey just to make sure I have plenty of leftovers to make it. I particularly like smoked turkey gumbo.

you can make a legitimate gumbo with no roux. Okra and file can thicken as well. I always use roux, myself, but you dont need roux for a gumbo.

Not making roux dark enough and using water instead of stock....these are the big two.
