Hats off to Waffle House for employing people

Most restaurants and retail outlets these days try to run things with as few people as possible, with no regard for service levels or timeliness (looking at you, Outback)
So it was nice this morning to walk into a busy Waffle House and see 12 employees working hard and hustling like a well oiled machine.
Looked like 2 cleaners / washers, 1 manager, 4 servers and 5 cooks.
Food was hot and quick.
Waffle House must not yet be owned by PE.

I'm always amazed by the number of people manning a waffle house particularly when there's only 4 or 5 customers in there.
The small business owner in me can't reconcile that payroll cost

There's good ones and bad ones. The bad ones suck even with 12 people on the floor. The bad one is closer to me, I drive the extra ten minutes to go to the good one. Heading over there in a few minutes for Sunday lunch rush. Always exciting.
You make a good point though.
Waffle House is something AI can't do better than humans. They might still be the only place still using paper tickets instead of some electronic POS system.

I think one of the best performances I've ever seen in anything is a cook named Jerome and a server named Angie running the whole house on a Saturday just coming out of covid. That joint was packed.
Jerome worked one side of the house and cooked. Angie worked the other side and the bar, plus made waffles. Two people, doing it all. Jerome was a five star, or whatever they call it, cook. There's no telling what kind of money he made as a WH cook during that time when most of the staff checked out for the covid money. We always tipped him well because he damn sure earned it. I think he's a store manager now at another store.

I tip kitchen staff at waffle house, too.

When it comes to waitstaff, I always think the opposite. “You’re paying these people $2.13 an hour. Why are there only two on the floor in this entire fricking restaurant…”

Waffle House recruiters often attend college career fairs, but rarely get any bites. Snooty kids look down upon being employed by them. But, Waffle House managers make bank: +$90K/yr.

Following natural disasters, Waffle Houses are often among the first businesses to re-open. This not only gives people in the area a place to eat while they begin demo'ing and rebuilding, but it gives the employees that as well (and the security of knowing they are still getting a paycheck).

Their To Go fee passes me off because I tip the counter help and the cook.

Waffle House has to be properly staffed in case a customer gets crazy and needs an arse beating.
