Instead of regular white. brown, wild rice, try cauliflower rice.
Very easy to make and loaded with lots of vitamins and fiber.
And it's pretty tasty. I thought I was not going to like it but
I was pleasantly surprised.
Store it in individual bags in your freezer
It has 5 grams of carbs per cup compared to 45 grams of carbs for brown rice.

I use chatGPT for my recipes. If you tell it that you want high protein, low fat, no carbs, etc and you want to meal prep for the week then it will give you some recipes that you can tailor to your liking. My doctor told me that my bloodwork came back with pre-diabetes and to start eating more on the Mediterranean diet. I put that into GPT and now every meal tailors it towards the Med. diet. Sometimes I will tell it that I feel like pizza tonight but want something healthy and it will give me a chicken breast pizza recipe and play-by-play instructions on how to make it.

One of my go to's that is super simple is air fryer tandoori style chicken thighs. Store I go to usually sells boneless/skinless in 6 packs. I'll add two plain greek yogurt single serving packs to a mixing bowl(I use the full fat ones but use whatever you like). Then add in salt, pepper, jarlic (or powder), onion powder, chili powder, smoked paprika, cayenne pepper, curry powder, tumeric, garam masala, cumin, coriander, cinnamon, and lemon juice. Use your heart's discretion on the amounts, especially the curry and garam masala. Mix everything together until it is a nice paste. Add the chicken into the bowl and get it well incorporate and into all the crevices, cover and let marinate over night. Preheat and pop in the air fryer @ 390 for around 16 minutes (I usually do 3 at a time).
I'll pair it with roasted potates and veggies or rice/veggies or whatever you feel like.

Cooking for gains has good easy recipes. But he’s gotten weird as frick lately. Still solid meal prep ideas though.
Tasty shreds is another solid insta follow but recipes are a little more involved.
Lately I’m busy as hell so I’ve been lazy with meal prep. I buy a 10# roll of 93/7 at Costco, brown it with onions, and pair it with jasmine rice or a sweet potato. Option B has been 10# or boneless thighs on the pellet grill, also paired with a carb. If you have an Albertsons in the area, they run great sales on breast & thighs.
Anyone have any recommendations on good marinades or seasonings for chicken? Looking to change the flavor profile up a lil

Look at videos on Youtube by Panacea Palm. Those gave me several good options.

32oz plain nonfat Greek yogurt
3c PB2
12 scoops of vanilla protein powder
12 tbsp of semisweet choc chips.
Mix the 1st 3 (it’s a bitch) put it in a Pyrex dish. Melt the choc & spread over the top. Put in the fridge for a few hours
Makes 12 servings @ 45g protein & about 350 cals

Lemon juice and little olive/avocado oil. Dont marinade for long with the lemon juice (1 hour or so). Seasoning wise...McCormick makes a Garlic, Herb, Black Pepper, and Sea Salt that is great on chicken and vegetables

I like to dump a jar of pickled jalapeños in a zip lock and let the chicken swim in that overnight. Season and grill afterwards.

I’ll fix some breakfast burritos with the Ole High Fiber tortillas, black beans, scrambled eggs (I add a little cottage cheese to them for extra protein), and shredded cheddar cheese. Sprinkle some fajitas seasoning on the eggs when I cook them.
I’ll match a batch and freeze them wrapped in foil. Then reheat in the air fryer.
