What's on your menu for Christmas Day?
We're doing a big breakfast/brunch thing here this year. The complete menu is yet to be completely determined.

All the kids and grandkids coming to our house for Christmas Eve. Doing fried catfish and crawfish etoufee with rice, hush puppies, corn maque choux, and boudin.

Complete departure this year, as everyone coming decided they want snack/game food. So…baked ham sliders, dips, cheese balls, charcuterie, and meatballs. Plus cocktails. We are all pretty pleased with the prospect.

Christmas Eve: some kind of aged cheese as we cook, prime rib, asparagus, then bourbon
Christmas:
-Breakfast my wife makes cinnamon rolls from scratch, starting the night before and rising early
-Lunch our tradition is shrimp and corn soup, but this year with this 70 degree BS we'll delay that to New Year's. Thinking breakfast food for late lunch/earyl dinner, and before that we're going to make soft pretzels (never done this before but it's one of 3 things everyone will eat and the plan is to veg out anyway).

All submissions so far sound awesome, and I’m sure taste even better. My usual overload for the holidays has been reduced because my mom and younger brother both have stage four cancer. Doing a kind of buffet table. Whole roasted prime beef tenderloin sliced thin for small sandwiches with various sauces, turtle soup and duck and andouille gumbo from the NOCC, cheese board and various appetizers. Lots of wine.

Breakfast casserole with sausage, cheese, etc.
Late lunch/dinner of roasted chickens, cornbread dressing, homemade cranberry sauce, mashed potatoes and gravy, whatever vegetable sides someone makes.
We’re in a VRBO house, which we do often at Christmas, so cooking on strange equipment is an adventure. The brand new gas stove/oven is “smart”, so I’m already about to smash it with a sledgehammer. Same for the “smart” thermostat. Who asked for that shite?

2 sticks butter
A shallot diced really fine
3 TBS of flour
4 cans with LeSeure* or Dubois small green beans (Petis Pois)
Melt butter
Cook down shallot till clear
Add flour and make a light roux, not quite the color of paper bag, a little lighter.
Stir in peas (water and all)
You may need to add a little water to thin it out some depending on how thin you like them.
Serve over rice or if you like my wife over creamed potatos.
